Xmas Vacay Day ??: New Recipe Night

Some days it feels like day 100, other days, day 1.

Either way, Christmas is over!!

WOOHOO!

Aside from a few family and friend gifts still to deliver, the stress and worry is gone.

KATHUNK!

Sorry, I just passed out a minute out of sheer exhaustion.

Yesterday and today we've been on complete CHILL mode.

Reading, eating, light chores, movies, wine, wood stove....ahhhh.

We've watched Benchwarmers, Kicking and Screaming, Home Alone, Night at the Museum, The Santa Clause trilogy, oh and Mickey's Christmas Carol.

Tonight, I even tried a new recipe that I adapted from Rachael Ray.

Bacon-wrapped Chicken!

The smell of it in the oven alone could get your pets to drool!

Hubby has this killer marinade that's a mustardy-vinegarette that we soak the chicken in, wrap the bacon around bite-sized chunks of chicken breasts (I used tenders), bake at 400 for about 20 min.

The best part?!?

THE KIDS LOVED IT!

Especially DQ who is the pickiest eater on the planet.

It was so good mixed with our green salad and dinner rolls.

This would make a fab appetizer to take to a party too.

Oh...and Rachael Ray also put spinach between the bacon and chicken...

I could have done that, but who am I kidding, no one for sure would eat it.

Thus, the big helpings of salad.

Alas, I feel giddy with excitement that something I tried got 10 thumbs up!

I mean I watch hours of Food Network programming and I'm always asked, "would you eat that!?" and often it's no, but watching cooks is oddly thrilling.

Bobby Flay, Tyler Florence, Ina Garten, Emeril, Iron Chef America.

Food.

We need smell-o-vision.

Anyway, back to Operation:Relaxation.

I think tonight's movie is Twilight.

Hubby wants to understand the fascination.

DQ and I could not argue.

Wine, vampires, and popcorn, ta-ta!

Is it truly possible to make a dinner that everyone likes? Really?!? OK Jen, I'm going to try this. (Sometimes I feel like I'm running a small restaurant at dinner time. Lily doesn't like this, Katie doesn't like that, blah, blah, blah.)

And I can't believe I still haven't seen Twilight. What's the matter with me?

Ooohhh! I am so going to try that bacon chickeny thing! My menfolk will absolutely devour it! They kind of LOVE bacon. Gonna pass on the Twilight thing though. I guess I'm on eof the few who doesn't get the fascination and probably won't ever watch it to find out. Hope your evening was just as relaxing as you needed it to be!

Alton Brown. Don't ever underestimate the sexiness of a nice guy who can cook. I'd dump mine for him in a heartbeat. Well, probably not, but you get the idea.
